Ingredients for the delicious low carb pizza soup:


  • 200g minced meat / minced or smoked tofu
  • 1 small onion
  • 1 clove of garlic
  • 100g mushrooms
  • 1 small can of corn (can also be left out to save carbohydrates)
  • 1 paprika
  • 3 slices of processed cheese (omit for vegan variant)
  • 100 ml cream / whipped cream or soy cream
  • 1/4 liter water
  • 150 ml strained tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon of olive oil
  • salt, pepper, chili, oregano
  • Herbs for garnishing

Preparation:


1.) Finely chop onion and garlic. Chop the peppers and mushrooms into small pieces.

2.) Fry the minced meat in oil. For the vegetarian and vegan versions, crush the smoked tofu with a fork and fry it.

3.) Add all the vegetables and fry a little bit. Add the tomato paste and also fry briefly. Make sure that it does not get too dark.

4.) Add the spices. Deglaze with water, tomato sauce and cream and simmer a little. Stir in the cheese.

5.) Season the soup well and serve hot. Garnish with herbs as desired.

The pizza soup is a low carb dish that is very suitable for "leftovers". Especially with vegetables you can use what you have in the fridge. Tomatoes, zucchini, aubergines and similar vegetables also go well in the soup.
